Sometimes all you want is a simple cake. This little one-egg cake is perfect from making in small kitchens. Ice or decorate as you wish.

Serves: 10 

  • 1 1/2 cups (185g) cake flour
  • 1 cup (220g) white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 85g copha
  • 2/3 cup (170ml) milk
  • 1 teaspoon vanilla essence
  • 1 egg

Preparation:10min  ›  Cook:35min  ›  Ready in:45min 

  1. Preheat oven to 180 degrees C, grease and flour a 20x20cm pan.
  2. Sift flour, sugar, baking powder and salt into a large bowl. Add copha and milk. Mix until smooth then add vanilla and egg. Mix well.
  3. Pour into pan. Bake for 30 to 35 minutes or until a toothpick inserted into the cake comes out clean.
