Filipino Fish and Vegetable Stew

    This is a delicious Filipino dish called Dinengdeng. If you can't find yard-long beans, substitute with green beans. Shrimp paste is available in Asian markets.

    Serves: 6 

    • 2 fillets milkfish or other white fish
    • 1 tomato, quartered
    • 1 onion, chopped
    • 2 tablespoons shrimp paste
    • 1 cup (250ml) water
    • 1 pinch salt and pepper to taste
    • 250g yard-long beans, cut into bite-size pieces
    • 250g zucchini, cut into bite-size pieces
    • 250g fresh okra

    1. Preheat the barbecue to medium heat and lightly oil the grate.
    2. Barbecue the fish fillets until the flesh flakes easily with a fork, 2 to 3 minutes per side.
    3. Combine the barbecued fillets, tomato, onion, shrimp paste and water in a pot; bring to a boil for 5 minutes. Season with salt and pepper. Add the yard-long beans and zucchini; stir. Cover the pot and cook over medium heat for 5 minutes. Stir the okra into the mixture and cook another 5 minutes. Serve hot.
