Egg Free Coffee and Raisin Cake

This is a very simple and delicious cake recipe that uses no eggs or milk. The secret is poaching the raisins in coffee, sugar and spices.


Serves: 24 

  • 3 cups (375g) plain flour
  • 2 teaspoons bicarb soda
  • 1 teaspoon baking powder
  • 2 cups (500ml) strong brewed coffee
  • 1 1/2 cups (330g) white sugar
  • 125g vegan margarine like Nuttelex
  • 1 cup raisins
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon

  1. Preheat oven to 180 degrees C. Grease and flour a 20x30cm pan. Sift together the flour, bicarb soda and baking powder. Set aside.
  2. In a large saucepan combine the coffee, sugar, butter, raisins, allspice and cinnamon. Bring to a boil, remove from heat and set aside to cool to room temperature.
  3. Stir in flour mixture until well combined. Pour into a pan. Bake in preheated oven for 45 to 50 minutes or until a toothpick inserted into the centre of cake comes out clean.
