Preheat oven to 180 degrees C. Line a mini muffin pan with paper liners.
In a large bowl, cream together the margarine and sugar. Add eggs and beat until smooth. Blend in cinnamon, allspice, baking powder and bicarb soda. Alternately add in a half cup of apple sauce, one cup of flour, remaining apple sauce and remaining flour. Stir until just blended together. Pour batter into muffin cups 2/3 of the way full.
I made these delicious Mini Apple Spice Muffins. I made then in the original patty pan size. They were an absolute hit with everyone who tried them. I have also varied it since the first time making them. When I have had Rhubarb and blueberries I have added these to some apple. Also delicious. Thank you very much for sharing.
