Crunchy Polenta Bread

    This is a great white bread recipe with a very crunchy crust. The addition of polenta adds an interesting flavour and texture. Great for sandwiches or with stews.

    Serves: 12 

    • 1 1/3 cups warm water
    • 1/4 teaspoon Tabasco sauce
    • 3 tablespoons vegetable oil
    • 1 tablespoon white sugar
    • 1 1/2 teaspoons salt
    • 3/4 cup polenta
    • 3 1/4 (400g) cups plain flour
    • 1 1/2 teaspoons instant yeast

    1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.

    I thought this came out very good, and I have some odd results with my new bread machine sometimes. I left out the hot sauce, because I don't like it, and scaled it down a bit to fit in my machine, but it came out great. Very light and not dense at all, I found. And the crust was nice and crunchy.
