This is a fun treat to put together with your kids on a hot summer day. Serve it with honey, chocolate or caramel sauce for an extra-decadent dessert.
1 1/2 cups rice bubbles
1/4 cup brown sugar
1 cup shredded coconut
1/2 cup (60g) chopped mixed nuts
1/4 cup margarine, melted
1 tub vanilla ice cream
500g sliced strawberries, fresh or frozen

Grease a 20x30cm baking dish.
In a medium bowl, stir together the rice bubbles, brown sugar, coconut, mixed nuts and melted margarine. Spread half of the mixture in the bottom of the prepared baking dish.
Cut the ice cream into 2cm slices and arrange in baking dish, covering all of the rice bubbles mixture. Sprinkle remaining rice bubbles mixture over the top of the ice cream and gently press down. Place baking dish in the freezer until frozen. Cut into squares and serve with strawberries. Bars can be kept covered in the freezer for 2 weeks.
