Simple Bacon and Cream Pasta

    As the title says bacon and cream - with some nutmeg and pepper to lift it. Nice with with a tossed green salad and some garlic bread.

    Serves: 2 

    • 250g linguine, or any pasta
    • 2 rashers of bacon bacon
    • 65g butter
    • 1/2 cup cream
    • 1/2 cup grated Parmesan cheese
    • 1/2 teaspoon ground white pepper
    • 1/4 teaspoon ground nutmeg

    Preparation:20min  ›  Cook:10min  ›  Ready in:30min 

    1. Bring a large pot of water to a boil. Add pasta and cook for about 7 to 8 minutes or until al dente; drain. Remove from pot, cover and set aside.
    2. Meanwhile, in a small frypan cook bacon over medium heat until crispy. Drain, cut into small pieces and set aside.
    3. In the pasta pot, melt butter over medium-low heat and add cream; heat thoroughly, but do not allow to boil.
    4. Combine cooked pasta with butter/cream mixture. Add Parmesan cheese and bacon; toss well. Allow sauce to thicken for a few minutes; add ground white pepper and nutmeg. Serve immediately.

    I increased this to feed our family and it was great. A few changes to accomodate what I had on hand: I had no cream so instead I used 2% milk, so after melting the butter, I added a few pinches of flour to ensure I'd have a thicker sauce. I used regular black pepper and threw in some crushed red pepper for kick and left out the nutmeg. Whole family enjoyed this and I love how easy and quick it was to throw together.
