Easy Cheesecake Cupcakes

These muffins are quick and easy and have a texture like cheese cake. They are fun to make with kids. You can substitute different kinds of pie filling if you prefer.

Serves: 24 

  • 750g cream cheese, softened
  • 1 cup (220g) white sugar
  • 1 1/2 teaspoons vanilla essence
  • 5 eggs
  • 800g tin apple pie filling

Preparation:20min  ›  Cook:35min  ›  Ready in:55min 

  1. Preheat oven to 170 degrees C. Line 2 (12 cup) muffin tins with paper liners.
  2. In a large bowl combine cream cheese and sugar. Mix until soft. Add eggs and combine. Add vanilla.
  3. Distribute evenly into lined muffin tins and bake for 35 minutes.
  4. When done, the centres will fall in a bit while cooling. When cool, fill depressions with 2 to 3 tablespoons of apple pie filling. Store in the refrigerator.
