Egg and Dairy-Free Chocolate Cake
This is a very simple cake to make, perfect for baking with kids. It is also egg-free and dairy-free and the ingredients are inexpensive.
Ingredients
Serves: 18
- 3 cups (375g) plain flour
- 2 cups (440g) white sugar
- 1 teaspoon salt
- 2 teaspoons bicarb soda
- 1/2 cup unsweetened cocoa powder
- 3/4 cup vegetable oil
- 2 tablespoons distilled white vinegar
- 2 teaspoons vanilla essence
- 2 cups (500ml) cold water

- Sift flour, sugar, salt, bicarb soda and cocoa together into a 20x30cm ungreased cake tin. Make three wells. Pour oil into one well, vinegar into second and vanilla into third well. Pour cold water over all and stir well with fork.
- Bake at 180 degrees C for 30 to 40 minutes, or until tooth pick inserted comes out clean. Ice with your favourite icing.

Excellent cake, it is now my go to cake. I have made it thrice now and it turned out brilliant. I do mix in a bowl then pour into a lined tin as the first time it stuck to the bottom. I find that it does not cook as quick as the recipe states and that after about 40 min I need to cover the top with tinfoil to stop it burning. It keeps well, I made three (turned out I only needed one and a half for the decorated cake) for a birthday and it was still just as tasty an moist a week later. - 23 Jun 2013

Whilst easy to make and very moist I felt it lacked the depth of flavour I was looking for and will experiment a little next time and report back. My little dairy free grandson devoured it regardless. - 13 Jul 2014
