    Orange zest adds a delightful citrus note to oat biscuits and the cranberries add a tart sweetness. Great for cooler days when you want something healthy and filling.

    Makes: 48 biscuits

    • 250g butter, softened
    • 1 cup packed brown sugar
    • 1/2 cup white sugar
    • 2 eggs
    • 1 1/2 teaspoons vanilla essence
    • 1 tablespoon grated orange zest
    • 1 teaspoon orange essence
    • 1 1/2 cups (185g) plain flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon ground cinnamon
    • 3 cups rolled oats
    • 1 cup dried cranberries

    1. Preheat oven to 180 degrees C.
    2. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla, orange zest and orange essence. Combine the flour, bicarb soda and cinnamon; stir into the butter mixture. Stir in the oats and cranberries. Drop by rounded tablespoonfuls onto ungreased baking trays.
    3. Bake for 10 to 12 minutes in the preheated oven, or until golden brown. Allow biscuits to cool on baking tray for 2 minutes before removing to a wire rack to cool completely.
