    The addition of oats, coconut and crispy rice cereal give these chocolate chip biscuits an amazing blend of flavours and textures. Enjoy!

    Ingredients
    Makes: 24 biscuits

    • 250g butter
    • 1 cup brown sugar
    • 1 cup white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1 1/2 cups (185g) plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarb soda
    • 1/8 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 2 cups rolled oats
    • 1 cup shredded coconut
    • 2 cups crispy rice cereal
    • 1 cup dark chocolate chips

    1. Preheat oven to 180 degrees C. Grease baking trays.
    2. In a large bowl cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla.
    3. Combine the flour, baking powder, bicarb soda, cinnamon and nutmeg; gradually stir into the creamed mixture. Finally, stir in the oatmeal, coconut, crispy rice cereal and chocolate chips. Drop by rounded spoonfuls onto the prepared baking trays.
    4. Bake for 8 to 10 minutes in the preheated oven. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
