    Crab mixed with bread crumbs makes an amazingly flavourful crust for baked fish. You may use any type of cheese you like in this recipe.

    Serves: 4 

    • 2 tablespoons seasoned bread crumbs
    • 2 tablespoons chopped red capsicum
    • 2 tablespoons chopped yellow capsicum
    • 2 spring onions, chopped
    • 1/4 hot chilli pepper, seeded and minced
    • 4 tablespoons butter, melted
    • 185g tinned crabmeat, drained and flaked
    • 2 tablespoons grated mozzarella cheese
    • 4 fillets white fish, such as hake

    1. Preheat the oven to 190 degrees C.
    2. In a medium bowl, stir together the bread crumbs, red capsicum, yellow capsicum, spring onions, jalapeno, butter, crabmeat and mozzarella cheese. Arrange fish fillets in a single layer in a 20x30cm baking dish. Spread the crumb topping evenly over the fish.
    3. Bake for 30 minutes in the preheated oven, or until fish is easily flaked with a fork.
