Cornflake Chocolate Chip Biscuits

    What a great recipe - it adds Cornflakes and walnuts to classic chocolate chip biscuits. This recipe can also easily be halved or doubled.

    Makes: 48 biscuits

    • 1/2 cup vegetable oil
    • 125g margarine
    • 1 cup brown sugar
    • 1 cup white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 1/2 cups Cornflakes(TM)
    • 1 cup rolled oats
    • 1 cup dark chocolate chips
    • 1/2 cup walnuts, diced

    1. Preheat the oven to 190 degrees C. Lightly grease baking trays.
    2. In a large bowl, mix together the oil, margarine, brown sugar and white sugar until smooth. Beat in the eggs one at a time then stir in the vanilla.
    3. Combine the flour, bicarb soda, baking powder and salt; stir into the sugar mixture. Mix in the cornflakes, oats, chocolate chips and walnuts. Drop by heaping teaspoonfuls onto the prepared baking trays.
    4. Bake for 12 to 15 minutes in the preheated oven, until golden brown. Allow biscuits to cool slightly on the baking trays before removing to wire racks to cool completely.

    These cookies were not good at all. I am so sad that I wasted my chocolate chips on this recipe. I think 375 was way too hot- after only 8 min. they were dark brown. I really don't even think they have a very good flavor.  -  18 Mar 2004  (Review from Allrecipes USA and Canada)
