Chocolate Coconut Pizza Biscuit

    This is a great chocolate pizza in the shape of a pizza and topped with coconut, nuts and Smarties. Great for kids.

    Serves: 24 

    • 1 1/2 cups (185g) plain flour
    • 2 teaspoons bicarb soda
    • 1 teaspoon salt
    • 2 1/3 cups rolled oats
    • 250g butter
    • 1 1/2 cups (250g) packed brown sugar
    • 2 eggs
    • 1/2 teaspoon vanilla essence
    • 1 1/2 cups shredded coconut
    • 1/2 cup chopped walnuts
    • 2 cups dark chocolate chips
    • 1 cup Smarties
    • 1 cup peanuts

    1. Combine flour, bicarb soda, salt and oats. Stir well to blend. Cream butter, brown sugar, eggs and vanilla together thoroughly. Add flour mixture to creamed mixture. Mix well.
    2. Stir in 1/2 cup coconut and chopped nuts. Spread dough evenly in 2 greased pizza pans or press into greased baking trays.
    3. Bake at 180 degrees C for 10 minutes. Remove from oven.
    4. Sprinkle with chocolate, remaining 1 cup coconut, Smarties and peanuts. Bake for 5-10 minutes longer or until golden brown. Cool in pans on wire racks. Cut cooled biscuit into wedges.

    We made the cookies and they spread so much that they overflowed the pan! I baked them for exactly 10 minutes and they were overdone on the outside and underdone in the middle.
