Ice Cream Cupcakes

    Cupcake sized cakes that are baked in an ice cream cone then decorated to also look like an ice cream cone. Ideal for a birthday party.

    Serves: 24 

    • 125g butter, softened
    • 1 cup (220g) white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1 3/4 cups (220g) plain flour
    • 2 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 2/3 cup (165ml) milk
    • 24 flat bottomed ice cream cones

    1. Preheat oven to 180 degrees C.
    2. Cream butter and sugar together well in mixing bowl. Beat in eggs 1 at a time. Mix in vanilla.
    3. Measure flour, baking powder and salt into small bowl. Stir. Add milk to butter mixture in 2 parts alternately with flour mixture in 3 parts beginning and ending with flour.
    4. Fill cones about 3/4 full leaving the batter 1cm from top. Place filled cones on a baking tray.
    5. Bake in oven for about 15 to 20 minutes until an inserted toothpick comes out clean.
    6. You can use a lemon icing, green butter icing, peanut butter icing or a combination of all.

    Okay, this is how to make them look like full cupcakes, bake another batch in regular cupcake papers, filling only half way. Take those cupcakes and put them on top of the baked ice cream cone cupcakes frosting them together, and voila! you have nice BIG full "scoops" of cake  -  07 Jul 2010  (Review from Allrecipes USA and Canada)
