Pineapple and Coke Ham

    Although this sounds a bit different the pineapple, coke, grape juice and brown sugar combine really well with the ham.

    Serves: 12 

    • 1 (4kg) boneless ham
    • 2 cups (310g) brown sugar
    • 1 (375ml) can or bottle of coke
    • 1 cup (250ml) grape juice
    • 1 (625) tin sliced pineapple, drained with juice reserved

    1. Preheat the oven to 165 degrees C.
    2. Use a knife to score a diagonal pattern onto the ham with the lines about 2cm apart. Place the ham in a large roasting dish and pat brown sugar over the entire surface. Some will fall into the dish, that is okay.
    3. Bake the ham in the preheated oven until the sugar is melting off of it; about 30 minutes.
    4. Remove the ham from the oven and pour the coke, grape juice and juice from the pineapple into the dish. Baste the ham with the mixture and return it to the oven.
    5. Continue to bake in the preheated oven, basting every 20 minutes for about 2 hours.
    6. Cut the pineapple rings in half. Remove the ham from the oven and float the pineapple rings in the drippings.
    7. Allow the ham to rest for about 10 minutes then slice and serve with the pineapple and sauce.

    I made this Ham for Easter. I used the slow cooker instead of the oven. The type of ham was a fully cooked Spiral Ham and cooked 4 to 5 hours on low. This ham was moist and a wonderful flavor.     To heyjude615, I bought a bottle of Welch's grape juice and used a cup of that. Made this for Easter dinner and it was delicious. Best ham I've had in a long time. Before making it I though maybe the brown sugar, cola, pineapple juice, and grape juice would end up making the ham too sweet. I couldn't have been more wrong. The sweetness complimented the saltiness of the ham perfectly. I'll definitely be making this again in the future.
