Walnut and Chocolate Rum Balls

    These easy to make rum balls are dense yet still moist, they contain a dark rum and walnuts giving a great flavour.

    Serves: 45 

    • 1 cup dark chocolate chips
    • 1 cup (220g) white sugar
    • 3 tablespoons golden syrup
    • 1/2 cup (125ml) dark rum
    • 2 1/2 cups vanilla biscuit crumbs
    • 1 cup chopped walnuts

    1. Melt chocolate over a double boiler stirring until smooth. Remove from the heat and whisk in 1/2 cup of sugar and the golden syrup then the rum.
    2. In a separate bowl stir together the biscuit crumbs and walnuts.
    3. Add the chocolate mixture to the nut mixture and stir until well blended.
    4. Place the remaining 1/2 cup of sugar in a shallow bowl. Roll the dough into 2cm balls then roll the balls in the sugar to coat evenly.
    5. Cover and refrigerate at least overnight for best flavour. These can be refrigerated up to 5 days.

    These little babies are delicious!! Being a no-bake cookie and rolling them in granulated sugar makes things a lot less messy, too, than rum balls I've made in the past rolling those in powdered sugar. Little trick I learned....go to the liquor store and buy the little miniature bottle of Bacardi dark rum. It's just enough for the recipe and you don't have to spend a fortune on a whole bottle of rum (unless you have other uses for it...LOL)!     I also use confectioner's sugar instead of white sugar... another substitution that I really like is Amaretto instead of rum. A low rating for "kid friendly" because of the alcohol, but hey, adults need a treat too!  -  03 Jul 2001  (Review from Allrecipes USA and Canada)
