    This is a simple to make dessert that combines cream and chocolate biscuits. I find it works best if you make it the night before allowing the biscuits to become softer and the cream firmer.

    Serves: 8 

    • 1 cup (250ml) thickened cream
    • 1/4 cup (60g) icing sugar
    • 1/2 teaspoon vanilla essence
    • 20 chocolate biscuits

    1. In medium bowl whip the cream, sugar and vanilla with electric mixer until stiff. Set aside 1 cup of whipped cream. Place a dob of remaining whipped cream on each biscuit and stack in groups of 4 or 5. Chill in refrigerator 15 minutes.
    2. Remove short stacks from refrigerator and lay down on serving plate to make one long roll. Spread reserved whipped cream on outside of roll. Cover and chill 3 hours before serving. Cut diagonally in 2cm slices.
