Chocolate and Strawberry Dessert Cake

    A homemade chocolate cake soaked in an orange liqueur is filled with and covered with fresh strawberries and fresh whipped cream.

    Serves: 16 

    • 60g dark cooking chocolate, chopped
    • 1 1/2 cups (185g) plain flour
    • 1/2 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1/2 cup (125g) white sugar
    • 85g margarine
    • 1 cup (250ml) sour milk
    • Topping
    • 2 tablespoons orange liqueur
    • 500g whipped cream
    • 1kg fresh strawberries
    • 60g dark chocolate, chopped

    1. Preheat oven to 200 degrees C. Grease and flour two 22cm cake tins.
    2. In the top of a double boiler heat the chocolate stirring occasionally until melted and smooth. Remove from heat and allow to cool to lukewarm.
    3. In a large bowl combine flour, baking powder, bicarbonate of soda, salt and sugar. Rub in margarine until mixture resembles coarse crumbs.
    4. Blend in sour milk and melted chocolate. Divide batter into prepared cake tins.
    5. Bake in the preheated oven for 15 to 20 minutes or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.
    6. Topping: Sprinkle cakes with orange liqueur.
    7. Reserve 8 to 10 strawberries and slice the rest. Place one cake on a serving plate then top with half of the sliced strawberries and half of the whipped cream.
    8. Cover with second layer then top with remaining strawberries and whipped cream. Garnish with whole strawberries.
    9. In the top of a double boiler heat the chocolate stirring occasionally until chocolate is melted and smooth. Drizzle over the strawberries.

    This was overall a good recipe. I doubled the amount of sugar in the cake but omitted the chocolate on top, as well as the orange liqueur. It was still not too sweet but tasted more like a dark chocolate. It looked very pretty sliced on a dessert plate that had been drizzled with chocolate syrup! My family liked this dessert, and we will be making it again.
