    This is a very quick and easy to make chocolate sheet cake that tastes great too. Goes well with a rich chocolate icing.

    Serves: 24 

    • 2 cups (250g) plain flour
    • 2 cups (440g) white sugar
    • 1 teaspoon bicarbonate of soda
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1/2 cup (125g) buttermilk
    • 125g butter
    • 1/2 cup (125ml) vegetable oil
    • 1 cup (250ml) water
    • 1/2 cup (60g) cocoa

    1. Preheat oven to 180 degrees C. Grease and flour a 28x42cm sheet cake tin.
    2. In a large bowl sift together the flour, sugar and bicarbonate of soda. Stir in the eggs, vanilla and buttermilk. Set aside.
    3. In a saucepan combine butter, oil, cocoa and water. Bring to a boil and stir until smooth. Slowly blend into the flour mixture. Pour into prepared cake tin.
    4. Bake in the preheated oven for 15 to 20 minutes or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.
