    Who can resist chocolate rum balls at Christmas? This recipe makes a large batch, so it's perfect for a family gathering or as food gifts. They are best prepared a few days ahead.

    Makes: 48 balls

    • 3 1/4 cups vanilla wafers, crushed
    • 3/4 cup icing sugar
    • 1/4 cup cocoa powder
    • 1 1/2 cups walnuts, chopped
    • 3 tablespoons light golden syrup
    • 1/2 cup (125ml) rum

    1. In a large bowl, stir together the crushed vanilla wafers, icing sugar, cocoa and walnuts. Stir in golden syrup and rum.
    2. Shape into 3cm balls and roll in additional icing sugar. Store in an airtight container for several days to develop the flavour. Roll again in icing sugar before serving.
