    These are a decadent biscuit packed with the flavours of rocky road; these being chocolate, marshmallows and nuts.

    Serves: 24 

    • 125g butter
    • 1/2 cup dark chocolate chips
    • 1 cup (220g) white sugar
    • 2 eggs
    • 1/2 teaspoon vanilla essence
    • 1 1/2 cups (185g) plain flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 cup chopped walnuts
    • 1/2 cup dark chocolate chips
    • 48 miniature marshmallows

    1. Preheat oven to 200 degrees C.
    2. In a small saucepan melt together the butter and the chocolate chips stirring frequently. Remove from heat and set aside to cool.
    3. In a medium bowl stir together the melted chocolate mixture with the sugar, eggs and vanilla.
    4. Sift together the flour, baking powder and salt then stir into the chocolate mixture.
    5. Stir in the chopped nuts and remaining chocolate chips.
    6. Drop dough by rounded teaspoonfuls onto unprepared baking trays. Press a miniature marshmallow into the centre of each biscuit.
    7. Bake for 7 to 8 minutes in the preheated oven. Remove from baking trays immediately to cool on wire racks.
