Chocolate Filled Peanut Butter Cups

    This is a really easy to make sweet treat. Milk chocolate is melted down to create a chocolate cup then filled with peanut butter before being enclosed with more chocolate.

    Serves: 12 

    • Cups
    • 180g milk chocolate
    • Filling
    • 1 cup peanut butter
    • 1/4 teaspoon salt
    • 1/2 cup icing sugar
    • Topping
    • 180g milk chocolate

    Preparation:20min  ›  Cook:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour25min 

    1. Trim 12 paper muffin cases to half of their height.
    2. Cups: Place chocolate chips in a microwave safe container. Microwave for 2 minutes stirring after each minute.
    3. Spoon melted chocolate into muffin cases filling halfway. With a spoon draw the chocolate up the sides of the cups until evenly coated. Cool in the refrigerator until firm.
    4. Filling: In a small bowl mix together peanut butter, icing sugar and salt. Divide into the chocolate cups.
    5. Topping: Melt the remaining chocolate and spoon over peanut butter. Spread chocolate to edges of cups.

    Made it healthier. peanut butter already has enough salt and sugar in it, no need to add more. I've been making these for 40 years, so easy and always a favorite at Easter.  -  01 May 2011
