Chocolate and Oat Cake

    This is a wholesome oat cake but with a touch of indulgence coming from the chocolate. Ideal for lunch boxes and picnics.

    Ingredients
    Serves: 12 

    • 1/2 cup rolled oats
    • 125g butter
    • 1 cup (250ml) boiling water
    • 1 1/2 cups (250g) brown sugar
    • 2 eggs, whisked
    • 1 teaspoon vanilla essence
    • 1 cup (125g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 4 tablespoons cocoa

    Directions
    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 degrees C. Grease one 20x20cm cake tin.
    2. In a large bowl mix together the rolled oats and butter. Mix in boiling water. Set aside to cool.
    3. Beat together the brown sugar, eggs and vanilla then add to cooled oat mixture and mix well.
    4. Sift together the flour, bicarbonate of soda, baking powder, salt and cocoa. Add to wet ingredients and mix well. Spread into the prepared cake tin.
    5. Bake at 180 degrees C for 40 minutes. Remove from oven and allow to cool then remove from cake tin.

    Very nice recipe, however I did make some changes. First, I was running low on brown sugar, so I used 3/4 cup brown, and 3/4 cup white. Then, I added WAY more coco powder then called for. (Probably about 1/2 cup) It turned our great! SOOOO chocolatly and rich. It was great just like that. Didn't even need any icing.  -  07 Jul 2006  (Review from Allrecipes USA and Canada)

    This is a great recipe. I substituted applesauce for the butter and added 1 tsp of cinnamon and 1 extra Tablespoon of cocoa powder. It turned out moist and flavorful with a unique texture.  -  09 May 2006  (Review from Allrecipes USA and Canada)
