Chocolate Chip Cookies with Coffee Liqueur

Chocolate chip cookies are made extra decadent with a touch of coffee flavoured liqueur. This is certain to become your favourite chocolate chip cookie recipe.


Makes: 36 cookies

  • 250g butter, softened
  • 1 cup brown sugar
  • 3/4 cup white sugar
  • 2 eggs, beaten
  • 3 tablespoons coffee-flavoured liqueur
  • 3 cups (375g) plain flour
  • 3/4 teaspoon bicarb soda
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups milk chocolate chips

  1. Preheat oven to 180 degrees C. Line baking trays with baking paper.
  2. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time then add the coffee liqueur. Combine the flour, bicarb soda, salt and cinnamon then stir into the creamed mixture. Fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared baking trays.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking trays for 5 minutes before removing to a wire rack to cool completely.
