Chunky Chocolate Chip Cookies

I'm not sure what is different about this chocolate chip cookie recipe but it is definitely my favourite. Also good with white or milk chocolate chips.

Makes: 18 cookies

  • 2 cups (250g) plain flour
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon salt
  • 250g margarine
  • 1/2 cup white sugar
  • 3/4 cup packed brown sugar
  • 1 egg
  • 2 1/2 teaspoons vanilla essence
  • 1 1/3 cups dark chocolate chips
  • 1 cup walnuts, diced

  1. Preheat oven to 180 degrees C.
  2. Combine flour, bicarb soda and salt. Set aside.
  3. In a large bowl cream the margarine and the two sugars. Beat in the egg and vanilla. Gradually blend in the dry ingredients.
  4. Fold in the chocolate chips and the nuts. Cover and chill for 2 to 3 hours.
  5. Drop by teaspoonfuls onto lightly greased baking trays. Bake 10-12 minutes and transfer to wire racks to cool. Take out of oven when lightly coloured - they will darken after being taken off baking tray.
