Baked White Chocolate Cheesecake

    This is a good straightforward white chocolate cheesecake which you can decorate with halved strawberries or shaved chocolate. Use the best white chocolate you can.

    Ingredients
    Makes: 1 cheesecake

    • 50g digestive biscuits, crushed
    • 1/3 cup white sugar
    • 80g butter, melted
    • 220g white chocolate
    • 500g light thickened cream
    • 450g cream cheese, softened
    • 1 cup white sugar
    • 4 eggs

    Directions

    1. Preheat oven to 180 degrees C.
    2. In a small bowl mix the crumbs, 1/3 cup white sugar and melted butter. Press into the bottom and a little up the sides of a 23cm springform cake tin.
    3. Bake for 15 minutes in the preheated oven then set aside to cool. Turn the oven down to 160 degrees C. Chop the white chocolate into pieces and melt over a double boiler along with the cream, stirring occasionally until melted. Set aside.
    4. In a mixing bowl beat the cream cheese and 1 cup sugar until soft. Stir in the eggs, one at a time, mixing well between additions. Stir in the chocolate mixture until fully incorporated. Pour into the prepared crust.
    5. Bake for 55 to 60 minutes in the preheated oven. Let cake cool to room temperature then refrigerate for at least 8 hours before serving.

    I have three words for this recipe "OH MY GOD" It is without a doubt the BEST chocolate cheesecake recipe I have ever tried! It is easy to make and the results are AWESOME!     I loved this chocolate cheesecake! It was really good, my husband(who doesn't really like chocolate that much), really loved it also. Along with a few friends. Only thing I changed was I used chocolate wafers for the bottom instead of graham crackers. And I put homemade whipped cream on top.  -  14 Nov 2005  (Review from Allrecipes USA and Canada)

    The cheesecake was great but as I did not have a springform pan, I made two servings of the crust and divided up the filling ,baked at 350 for 35 minutes and I got two cakes instead of one!  -  05 Dec 2004  (Review from Allrecipes USA and Canada)
