    This is a delicious vegan pasta salad that uses a spicy peanut sauce along with red capsicums and spring onions.

    Serves: 4 

    • 250g fettuccine pasta
    • 2 tablespoons peanut butter
    • 1/2 cup (125ml) vegetable stock
    • 2 tablespoons soy sauce
    • 3 cloves garlic, crushed
    • 2 teaspoons chilli flakes
    • 1 red capsicum, diced
    • 2 spring onions, sliced
    • 1/2 cup diced fresh coriander

    1. Cook pasta in a large saucepan of boiling water until al dente. Rinse and drain. Set aside.
    2. In a large bowl combine peanut butter, stock, soy sauce, garlic and chilli flakes. Mix well.
    3. Add pasta, sliced red capsicum, spring onions and coriander. Toss to combine. Chill.
