    A great way to use up leftover cooked chicken this fried rice has few ingredients and is quick to make. I love the pieces of egg in it.

    Serves: 2 

    • 1 egg
    • 1 tablespoon water
    • 1 tablespoon butter
    • 1 tablespoon vegetable oil
    • 1 onion, diced
    • 2 cups cooked white rice, cold
    • 2 tablespoons soy sauce
    • 1 teaspoon ground black pepper
    • 1 cup cooked, diced chicken meat

    1. In a small bowl beat egg with water. Melt butter in a large frypan over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from frypan and cut into strips.
    2. Heat oil in same frypan then add onion and saute until soft. Add rice, soy sauce, pepper and chicken.
    3. Stir fry together for about 5 minutes then stir in egg. Serve hot.

    Hi, I tried this recipe as I havn't had much experience with rice so that made it take way longer but I do like this recipe. I added peas and beans. The peas I added kind of balances out the flavour and it tastes awesome. but I think it was too much soy sauce mayby 1 and half tablespoons would be better but I guest its what you prefer.     Wasn't the greatest recipe but worth giving a try. A little dry and not very flavoursome. I added some vegetables and extra soy sauce to attempt to get more flavour but it was still a little bland. It's not bad just needs a little work. For a quick and easy meal for the kids great choice!  -  28 Sep 2014


    I was pleasantly surprised to find that this came out just as good as the fried rice I get at my favorite local Thai restaurant. I followed the recipe in terms of ingredients, but here are a few extra things I did: I pounded my chicken breasts flat, cut them up into strips, and quickly stir fried them in a little olive oil and just a pinch of salt. Once they were almost cooked through, I splashed on a little bit of soy sauce and set them aside. I cooked my sliced onions in the butter, (instead of the eggs. I used PAM for those) Great flavor and gave the rice a little something too. When I combined all ingredients, I also added some green onion to this dish, red pepper, and red pepper flakes.
