    The main surprise of this chilli is the depth of flavour and what is used to achieve this; dark beer, coffee and cocoa!

    Serves: 8 

    • 2 tablespoons vegetable oil
    • 2 onions, diced
    • 3 cloves garlic, crushed
    • 500g beef mince
    • 375g beef sirloin, cubed
    • 1 (400g) tin peeled and diced tomatoes with juice
    • 1 (375ml) can or bottle dark beer
    • 1 cup (250ml) strong brewed coffee
    • 2 (185g) tins tomato paste
    • 435ml beef stock
    • 1/2 cup (90g) brown sugar
    • 3 1/2 tablespoons chilli powder
    • 1 tablespoon cumin seeds
    • 1 tablespoon cocoa powder
    • 1 teaspoon dried oregano
    • 1 teaspoon ground cayenne pepper
    • 1 teaspoon ground coriander
    • 1 teaspoon salt
    • 4 (400g) tins kidney beans
    • 4 fresh hot chillies, seeded and diced

    1. Heat oil in a large saucepan over medium heat. Cook onions, garlic, beef mince and cubed sirloin in oil for 10 minutes or until the meat is well browned and the onions are tender.
    2. Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef stock.
    3. Season with brown sugar, chilli powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt.
    4. Stir in 2 tins of the kidney beans and hot chillies. Reduce heat to low and simmer for 1 1/2 hours.
    5. Stir in the 2 remaining tins of kidney beans and simmer for another 30 minutes.
