Italian Sausage and Chicken Pasta

This is a creation of being in a rush one night; chicken, Italian sausage, capsicum, zucchinis and mushrooms all combine in a tomato based sauce for a quick and easy dinner.


Serves: 6 

  • 500g rotini or spiral pasta
  • 4 Italian sausages, sliced
  • 2 skinless, boneless chicken breasts, cubed
  • 1 onion, diced
  • 1 clove garlic, crushed
  • 1 green capsicum, diced
  • 1 teaspoon Italian herb mix
  • 1 pinch salt, to taste
  • 1 pinch ground black pepper, to taste
  • 1 (400g) tin diced tomatoes
  • 1 3/4 cups (435g) spaghetti sauce
  • 1 (140g) tin sliced mushrooms
  • 3 zucchinis, thickly sliced

  1. In a large saucepan with boiling salted water cook the pasta until al dente. Drain.
  2. Meanwhile in a large saucepan cook sliced Italian sausage until brown.
  3. Add cubed chicken and cook until no pink remains in either meat.
  4. Add onion, garlic, green capsicum, Italian herb mix, salt and ground black pepper and stir together. Cover and simmer until vegetables are tender.
  5. Stir in tomatoes, spaghetti sauce, mushrooms and zucchini. Simmer until zucchini is tender yet crisp.
  6. Toss cooked pasta with sauce. Serve warm.
