Hot Chicken Stew

    If you like things spicy, by all means try this recipe and up the amount of chilli to suit yourself. Great served with pasta or rice on the side.

    Ingredients
    Serves: 4 

    • 2 eggs, beaten
    • 1 cup garlic breadcrumbs
    • 1/2 cup Parmesan cheese
    • 1 pinch ground black pepper to taste
    • 750g skinless, boneless chicken breast halves, cut into cubes
    • 1/4 cup olive oil
    • 500g fresh mushrooms, sliced
    • 1 large onion, diced
    • 1/2 cup (125ml) white wine
    • 2 diced chillies, or amount desired

    Directions
    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Place the eggs in a shallow dish. Stir the breadcrumbs, Parmesan cheese and pepper together in a second shallow dish. Dip the chicken cubes first into the eggs then coat evenly with the breadcrumbs.
    2. Heat about half of the oil in a large frypan over medium heat. Stir in the chicken and cook until browned on all sides, about 10 minutes. Remove the chicken and drain on a paper towel-covered plate.
    3. Add more oil to the frypan if needed. Stir in the mushrooms, onion and wine. Cook and stir until the mushrooms are tender and have cooked down. This may take a good 15 minutes.
    4. Return the chicken to the frypan and stir into the mushroom mixture. Add the chillies. Simmer the chicken mixture, stirring occasionally, 5 to 10 minutes more before serving.
