    A piquant and flavourful preparation of chicken and fresh vegetables. Adjust the spiciness to your own particular taste. Serve with linguine, if you like.

    Serves: 4 

    • 500g skinless, boneless chicken breast halves - cubed
    • 1 cup Italian-style salad dressing
    • 2 teaspoons Cajun seasoning
    • 1/4 cup (65ml) olive oil
    • 5 cloves crushed garlic
    • 1 red capsicum, thinly sliced
    • 1 green capsicum, thinly sliced
    • 1 onion, diced
    • 250g fresh mushrooms, sliced
    • 1 cup (250ml) white wine
    • salt and pepper, to taste
    • 6 roma tomatoes, diced
    • 1 tablespoon chopped fresh parsley

    1. Marinate chicken in salad dressing to cover for at least 1 hour.
    2. Heat the chicken with Cajun seasoning in olive oil. Add crushed garlic, capsicums, onion, mushrooms, wine and salt and pepper to taste. Saute until tender. Add chopped roma tomatoes and chopped fresh parsley to taste. Serve.
