Easy Chicken Curry Salad

    Using a rotisserie chicken this easy salad can be put together very quickly to create a tasty entree, lunch or even light dinner. It can be served on bread, over lettuce or in pita bread.

    Serves: 6 

    • 1 rotisserie chicken, meat and skin removed and diced
    • 2 hard-boiled eggs, diced
    • 1/2 cup (125ml) mayonnaise
    • 1/2 cup diced apple
    • 1/2 cup diced celery
    • 1/4 cup diced onion
    • 1 teaspoon curry powder
    • 1/2 teaspoon paprika
    • 1 pinch cayenne pepper, to taste
    • 1 pinch salt, to taste

    1. Mix the chicken, eggs, mayonnaise, apple, celery, onion, curry powder, paprika, cayenne pepper and salt in a large bowl. Cover and refrigerate for 1 hour before serving.

    Easy and delicious! I used a Granny Smith Apple and red onion. I left out the egg and replaced that with a combination of sliced grapes, raisins, and chopped walnuts. I mixed the dressing in a separate bowl before folding it into the chicken and other ingredients. For the dressing I used 1/2 cup of Hellman's light mayo cut with 1/4 cup of reduced fat sour cream for added creaminess along with the curry, paprika and cayenne pepper. I also added a little bit of salt and black pepper. It chilled for just a couple of hours and it came out really good. Overall, a great combination of flavors!     I love this recipe - quick, easy and delicious. I doubled the curry and used 2 pks of Perdue Shortcuts (roasted). Left out the egg and apple, and added 2 tbsp of Mango Chutney for a touch of sweetness. Then, served on sweet rolls with lettuce.
