    Using a rotisserie chicken this easy salad can be put together very quickly to create a tasty entree, lunch or even light dinner. It can be served on bread, over lettuce or in pita bread.

    Serves: 6 

    • 1 rotisserie chicken, meat and skin removed and diced
    • 2 hard-boiled eggs, diced
    • 1/2 cup (125ml) mayonnaise
    • 1/2 cup diced apple
    • 1/2 cup diced celery
    • 1/4 cup diced onion
    • 1 teaspoon curry powder
    • 1/2 teaspoon paprika
    • 1 pinch cayenne pepper, to taste
    • 1 pinch salt, to taste

    1. Mix the chicken, eggs, mayonnaise, apple, celery, onion, curry powder, paprika, cayenne pepper and salt in a large bowl. Cover and refrigerate for 1 hour before serving.
