    Homemade chicken breast schnitzels are crumbed and fried before being topped with a homemade lime sauce that includes chives and dill.

    Serves: 4 

    • 4 skinless, boneless chicken breast halves, pounded to 6mm thickness
    • 1 egg, whisked
    • 2/3 cup dry breadcrumbs
    • 2 tablespoons olive oil
    • 1 lime, juiced
    • 6 tablespoons butter
    • 1 teaspoon finely diced fresh chives
    • 1/2 teaspoon dried dill

    1. Coat chicken breasts with egg and dip in breadcrumbs. Place on a wire rack and allow to dry for about 10 minutes.
    2. Heat olive oil in a large frypan over medium heat. Place chicken into the frypan and fry for 3 to 5 minutes on each side. Remove to a platter and keep warm.
    3. Drain oil from the frypan and squeeze in lime juice. Cook over low heat until it boils. Add butter then stir until melted. Season with chives and dill. Spoon sauce over chicken and serve immediately.
