Chewy Peanut Butter Slice

    Peanut butter features in this easy to make slice. It is so popular in my house I always make a double batch. Goes great with a chocolate icing.

    Serves: 16 

    • 1/2 cup peanut butter
    • 185g margarine, softened
    • 2/3 cup (155g) white sugar
    • 1/2 cup (90g) brown sugar
    • 2 egg
    • 1/2 teaspoon vanilla essence
    • 1 cup (125g) plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 180 degrees C. Grease a 22x22cm cake tin.
    2. In a medium bowl cream together peanut butter and margarine. Gradually blend in the brown sugar, white sugar, eggs and vanilla; mix until fluffy.
    3. Combine flour, baking powder and salt then stir into the peanut butter mixture until well blended.
    4. Bake for 30 to 35 minutes in preheated oven or until the top springs back when touched. Cool and cut into 16 squares.

    Great recipe! I made a couple of changes, though, to make it less cake-like and more brownie-like: I doubled the recipe and added one less egg and 1/3 cup less flour. I also added an extra 1/3 cup of peanut butter (and a few less tablespoons butter) and spread a thin layer of a chocolate glaze on top when it came out of the oven. It was a huge hit!
