    The glace cherry centre in these decadent chocolate rum balls are the perfect addition to what is otherwise a fairly traditional recipe.

    Serves: 24 

    • 1 cup dark chocolate chips
    • 1/2 cup (125ml) rum
    • 1/4 cup (60ml) light golden syrup
    • 3 cups vanilla biscuit crumbs
    • 1 1/2 cups chopped pecans
    • 1 cup (155g) icing sugar
    • 24 red glace cherries, halved

    1. Melt the chocolate chips then stir in the rum and golden syrup.
    2. Stir together the vanilla biscuit crumbs, pecans and 1/2 cup of the icing sugar. Drizzle the chocolate mixture over the crumb mixture and stir until blended.
    3. Shape mixture into 2cm balls. Roll balls in the remaining icing sugar. Place cherry half in centre of each ball pressing down lightly.
    4. Store in an airtight container for several days to develop flavour.
