This is a two layer slice the bottom being similar to a shortbread with the top layer being a combination of eggs, cherries, coconut and walnuts.


Serves: 12 

  • 1 cup (125g) plain flour
  • 125g butter
  • 3 tablespoons icing sugar
  • 2 eggs
  • 1 cup (220g) white sugar
  • 1/4 cup (30g) plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla essence
  • 3/4 cup chopped walnuts
  • 1/2 cup desiccated coconut
  • 1/2 cup maraschino cherries, quartered

Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min 

  1. Preheat oven to 180 degrees C.
  2. With your hands mix together flour, butter and icing sugar until smooth. Spread thinly (with fingers) on bottom of a square cake tin.
  3. Bake about 25 minutes.
  4. Meanwhile, lightly whisk eggs and stir all remaining ingredients into the eggs. Spread over cooked base and bake about 25 minutes more. Cool.
