Fish Topped with a Tropical Salsa

    This is a healthy way to eat fish with it first being grilled then topped with a tropical salsa with mixed fruit, corn, chilli and coriander.

    Serves: 4 

    • cooking spray
    • 1 (400g) tin tropical fruit salad, drained and diced
    • 1 (250) tin whole kernel corn, drained
    • 1/4 cup diced red onion
    • 2 tablespoons diced mild green chillies
    • 1 tablespoon diced fresh coriander
    • 500g boneless white fish fillets
    • 2 tablespoons lime juice
    • 1/2 teaspoon paprika

    1. Preheat the oven's grill and set the oven rack about 15cm from the heat source. Coat a grill tray with non-stick cooking spray.
    2. Toss fruit salad, corn, onion, chillies and coriander in a small bowl. Reserve.
    3. Place fish on the prepared grill tray and grill for 4 minutes.
    4. Turn fish over then brush with lime juice and sprinkle with paprika.
    5. Grill until fish flakes easily with a fork; 3 to 5 additional minutes. Top fish with salsa to serve.
