This rice pudding with honey, cinnamon and sultanas is similar to an Indian-style rice pudding and is cooked in a pot on the stove - not baked.

VERDIEIIIS

Ingredients
Serves: 6 

  • 500g cooked rice
  • 90g sultanas
  • 600ml skim milk
  • 100g honey
  • 30g butter
  • 1 teaspoon finely grated lemon rind
  • 1 tablespoon lemon juice
  • a good pinch teaspoon ground cinnamon (optional)

Directions
Preparation:20min  ›  Cook:15min  ›  Ready in:35min 

  1. Combine rice, sultanas, milk, honey and butter in a saucepan. Bring the mixture to a boil, reduce the heat, and let it simmer for 15 minutes; stirring occasionally. Stir in the finely grated lemon rind and juice.
  2. Serve the rice in bowls and garnish (optional) with cinnamon.

i omitted the lemon to make it more like what i remember from years ago - and it was PERFECT. creamy and sweet, it was a perfect way to use leftover rice for dessert. - 08 Oct 2008

Altered ingredient amounts. This was probably meant for dessert, but I ate it for breakfast! yum yum. 5Tbs of honey was plenty of sweetness for me, and I may reduce it even more next time. - 08 Oct 2008

so easy. so good. i will always make extra rice to save for this yummy pudding. i tried it with a tin of sweetened condensed milk and a little rose water instead of the lemon and it was good that way too. thanks susan - 08 Oct 2008
