    This is a rich and creamy filling made from ricotta cheese and icing sugar then flavoured with cinnamon, vanilla, cooking chocolate and lemon. Ideal for cakes like Sponge or Cassata.

    Serves: 12 

    • 1kg ricotta cheese
    • 2 1/4 cups icing sugar
    • 1/2 teaspoon ground cinnamon
    • 1 1/2 teaspoons vanilla essence
    • 60g dark cooking chocolate
    • 1/2 cup glace lemon peel

    1. Beat the ricotta cheese well then add the icing sugar and the cinnamon.
    2. Add the vanilla and grate in the chocolate using the coarse side of a grater.
    3. Stir in the lemon peel and mix. Chill until ready to use.
