This is a lovely fruity bread that can be made in the bread machine. Lovely served warm with butter or cream.

Ingredients
Serves: 10 

  • 200ml milk
  • 3 tablespoons butter
  • 1 tablespoon brown sugar
  • 1 egg
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 400g strong bread flour
  • 1/2 teaspoon dry yeast
  • 75g dried cherries
  • 75g raisins

Directions
Preparation:10min  ›  Cook:2hours30min  ›  Ready in:2hours40min 

  1. Place the milk, butter, brown sugar, egg, salt, cinnamon, yeast and bread flour into the pan of a bread machine in the order recommended by the manufacturer. Select the white bread cycle.
  2. About 5 minutes before the end of the mixing process, add the dried fruit. If your bread machine has a fruit setting, use that.

Altered ingredient amounts. We tried another similar recipe, but the bread was too dense. This was perfect. Very light. I just used 185g of sultanas, and it was perfect. This is definitely a keeper! - 29 Sep 2008
