    This is a great cake that includes the standard fruit cake ingredients like sultanas, mixed fruit and glace cherries but with lots of healthy carrot.

    Ingredients
    Serves: 16 

    • 1 cup (250ml) vegetable oil
    • 1 cup (220g) white sugar
    • 1 cup (155g) brown sugar
    • 4 eggs
    • 3 cups finely grated carrots
    • 2 1/2 cups (250g) plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarb soda
    • 2 teaspoons ground cinnamon
    • 1 teaspoon salt
    • 1 cup sultanas
    • 1 cup glace cherries, halved
    • 1 cup glace mixed fruit
    • 1 cup dates, pitted and diced
    • 1 cup chopped walnuts
    • 1/2 cup (60g) plain flour

    Directions

    1. Preheat oven to 165 degrees C. Grease and flour a25cm ring tin.
    2. Beat the vegetable oil with the white and sugars. Beat in the eggs one at a time. Stir in the grated carrots.
    3. Add the flour, bicarb soda, baking powder, cinnamon and salt. Stir until just moistened.
    4. Toss the sultanas, glace cherries, mixed fruit, dates and walnuts with the remaining flour. Stir to coat.
    5. Add fruit and nut mixture to the batter and stir until combined.
    6. Pour batter into the prepared cake tin.
    7. Bake at 165 degrees C for 1 1/2 hours.

    made this recipe for Grannys 85th birthday, it was so easy, and sooooo good! Very moist, lighter than normal fruit cake and very yummy, for the top tier we substituted grated apple for the carrot and it was just as good  -  19 Nov 2012
