Walnut and Carrot Cake
Spices feature in this tasty walnut and carrot cake making it ideal to have with a glass of milk or a cup of tea.
Ingredients

- 3 cups (375g) plain flour
- 1 cup (250ml) vegetable oil
- 1 1/2 cups (250g) icing sugar
- 1 cup chopped walnuts
- 1 cup grated carrots
- 1 cup (250ml) milk
- 6 eggs
- 1 teaspoon bicarbonate of soda
- 1 teaspoon vanilla essence
- 3 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cardamom

- Preheat oven to 180 degrees C. Grease and flour one 25cm ring tin.
- Sift the flour, bicarbonate of soda and baking powder together and set aside.
- Beat the eggs with the cinnamon, nutmeg and cardamom for 5 minutes. Stir in the icing sugar and mix well. Beat in the vegetable oil and continue beating for 5 minutes.
- Alternately add the flour mixture and the milk, 1 tablespoon at a time to the egg mixture.
- With a spoon stir in the carrots and the walnuts. Pour the cake mixture into prepared cake tin.
- Bake at 180 degrees C for 1 hour.

This is a European style cake. It's quite dry and not particularly sweet, but frosting helps with the extra sweetness.
