Walnut and Carrot Cake

    Serves: 14 

    • 3 cups (375g) plain flour
    • 1 cup (250ml) vegetable oil
    • 1 1/2 cups (250g) icing sugar
    • 1 cup chopped walnuts
    • 1 cup grated carrots
    • 1 cup (250ml) milk
    • 6 eggs
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon vanilla essence
    • 3 teaspoons baking powder
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cardamom

    1. Preheat oven to 180 degrees C. Grease and flour one 25cm ring tin.
    2. Sift the flour, bicarbonate of soda and baking powder together and set aside.
    3. Beat the eggs with the cinnamon, nutmeg and cardamom for 5 minutes. Stir in the icing sugar and mix well. Beat in the vegetable oil and continue beating for 5 minutes.
    4. Alternately add the flour mixture and the milk, 1 tablespoon at a time to the egg mixture.
    5. With a spoon stir in the carrots and the walnuts. Pour the cake mixture into prepared cake tin.
    6. Bake at 180 degrees C for 1 hour.

    This is a European style cake. It's quite dry and not particularly sweet, but frosting helps with the extra sweetness.
