Sea Bass Fillets with Crayfish and Crab Sauce

    Perfect for seafood lovers sea bass fillets are baked in the oven whist covered in a creamy crayfish and crab sauce.

    Serves: 4 

    • 4 (125g) sea bass fillets
    • 1 pinch sea salt and ground black pepper to taste
    • 125g butter
    • 3 tablespoons light olive oil
    • 2 shallots, finely diced
    • 1/2 teaspoon minced garlic
    • 3 tablespoons diced fresh parsley
    • 3 tablespoons plain flour
    • 1/2 cup (125ml) cream
    • 1/2 cup (125ml) milk
    • 1 pinch white pepper, to taste
    • 500g cooked crayfish tails
    • 185g crab meat, diced

    1. Preheat an oven to 180 degrees C.
    2. Season the sea bass with salt and pepper then arrange in a baking dish and set aside.
    3. Melt the butter with the olive oil in a frypan over medium-low heat. Cook the shallots, garlic and parsley in the melted butter and olive oil until softened; about 5 minutes.
    4. Add the flour and stir continually until completely incorporated into the mixture and the liquid is smooth.
    5. Pour the cream and milk into the mixture while stirring then cook and stir until thickened. Season with the white pepper.
    6. Gently fold the crayfish tails and crab meat into the mixture taking care to not break the crab meat too much. Cook another 1 minute then spoon the mixture over the sea bass fillets.
    7. Bake in the preheated oven until the fish flakes easily with a fork; 15 to 20 minutes. Serve immediately.

    This was an incredible dish that did not last long on our plates! I did not have cream so I used milk instead and the sauce came out fine. I also could not find crawfish and stuck with immitation crab.
