    A great way to use up any leftover fruit loaf or raisin bread. A sweet honey and vanilla custard poured over cubes of fruit loaf then baked in the oven.

    Serves: 6 

    • 2 eggs
    • 2 egg whites
    • 380ml skim milk
    • 2 tablespoons honey
    • 1 teaspoon vanilla essence
    • 6 slices fruit loaf, cubed

    1. Preheat oven to 160 degrees C. Lightly grease a 23cm baking dish.
    2. In a large bowl, beat together the eggs and egg whites until foamy. Mix in the milk, honey and vanilla. Stir in the bread cubes then pour into prepared dish.
    3. Bake for 30 to 35 minutes or until knife inserted in centre comes out clean.
