Caramel Cups
Hope you are not on a diet! These are a sweet treat packed with caramel in a cream cheese case and a coffee topping. Yum!
Ingredients
Serves: 12
- Base
- 250g cream cheese
- 2 cups (250g) plain flour
- 250g butter
- Caramel
- 420g individually wrapped caramels, unwrapped
- 155ml evaporated milk
- 2 teaspoons coffee flavoured liqueur
- Topping
- 250g butter
- 2/3 cup (155g) white sugar
- 155g evaporated milk
- 2 teaspoons coffee flavoured liqueur

- Base: Preheat oven to 180 degrees C.
- Beat together the cream cheese, flour and butter until well combined. Press dough into a mini muffin tin.
- Bake at 180 degrees C for 18 minutes.
- Caramel: Melt the caramels in the microwave or on the stove top. Add evaporated milk and coffee liqueur. Set aside to thicken.
- Topping: Combine the butter and evaporated milk, white sugar and coffee flavoured liqueur. Beat for at least 8 minutes.
- To Assemble: Pour caramel mixture into the baked cups filling them halfway. Wait 10 minutes and then top with the topping mix.

I recently attended a wedding where there were tassies such as these..... or at least that is what I thought. I followed the directions to a T, and they were dreadful. I was thoroughly dissapointed with the results. A total waste of time and money. I am an avid baker and found this to be a joke recipe, that someone submitted to play a prank.
