    Hope you are not on a diet! These are a sweet treat packed with caramel in a cream cheese case and a coffee topping. Yum!

    Serves: 12 

    • Base
    • 250g cream cheese
    • 2 cups (250g) plain flour
    • 250g butter
    • Caramel
    • 420g individually wrapped caramels, unwrapped
    • 155ml evaporated milk
    • 2 teaspoons coffee flavoured liqueur
    • Topping
    • 250g butter
    • 2/3 cup (155g) white sugar
    • 155g evaporated milk
    • 2 teaspoons coffee flavoured liqueur

    1. Base: Preheat oven to 180 degrees C.
    2. Beat together the cream cheese, flour and butter until well combined. Press dough into a mini muffin tin.
    3. Bake at 180 degrees C for 18 minutes.
    4. Caramel: Melt the caramels in the microwave or on the stove top. Add evaporated milk and coffee liqueur. Set aside to thicken.
    5. Topping: Combine the butter and evaporated milk, white sugar and coffee flavoured liqueur. Beat for at least 8 minutes.
    6. To Assemble: Pour caramel mixture into the baked cups filling them halfway. Wait 10 minutes and then top with the topping mix.
