A warming dessert cake - sweetened blueberries are baked with a cake mix on top. Serve warm with fresh cream.


Serves: 6 

  • Fruit
  • 3 cups fresh blueberries
  • 1 cup (220g) white sugar
  • Cake
  • 2 tablespoons butter
  • 1/2 cup (125g) white sugar
  • 1 egg
  • 1 cup (250ml) milk
  • 1 1/2 cups (185g) plain flour
  • 2 teaspoons baking powder
  • 1 pinch salt, to taste

  1. Preheat oven to 180 degrees C.
  2. Fruit: Arrange the blueberries in the bottom of a baking dish then sprinkle sugar over the blueberries.
  3. Cake: Cream together the butter, sugar and egg. Add the milk, flour, baking powder and salt. Beat until evenly combined. Drop by spoonfuls on top of the blueberries.
  4. Bake in preheated oven until golden brown; about 30 minutes.
