Chocolate Chip Biscuits with Ginger

    This is a chewy dark chocolate chip biscuit with the added zing of chopped crystallised ginger. Very tasty.

    Serves: 72 

    • 4 1/2 cups (560g) plain flour
    • 2 teaspoons bicarb soda
    • 2 teaspoons salt
    • 250g butter, softened
    • 250g margarine
    • 1 1/2 cups (300g) white sugar
    • 1 1/2 cups (330g) packed light brown sugar
    • 4 eggs
    • 1 tablespoon vanilla essence
    • 2 tablespoons skim milk
    • 4 cups dark chocolate chips
    • 3/4 cup crystallised ginger, finely chopped

    1. Preheat oven to 190 degrees C. Sift together the flour, bicarb soda and salt into a small bowl; set aside.
    2. In a large bowl, cream together the butter, margarine, white sugar and brown sugar until smooth. Beat in the eggs one at a time then stir in the vanilla and milk. Gradually stir in the sifted ingredients using a wooden spoon. Finally, mix in the chocolate chips and crystallised ginger. Use two spoons to drop biscuit dough 5cm apart onto a baking tray.
    3. Bake on the middle rack of the preheated oven for 12 to 15 minutes. The biscuits should be golden brown on the sides and the top should have lost its shine. Allow to cool on the baking tray for a few minutes before removing to a wire rack to cool completely.

    This is a very good recipe if you don't like the extra sweet style of regular chocolate chip cookies. My family and friends loved the cookies, and I wiil be making them again.     Absolutely loved these! Definitely do not omit the ginger-it is what makes these cookies delicious and unique. Perfect soft and chewy texture. The recipe was extremely easy to make and chopping the ginger was not hard at all.
